Here are some fast and easy recipes...

  ***CELEBRATION CHEESECAKE***  

One 9 inch graham cracker pie crust. Can be store bought or you can make it with graham crackers that you crush and mix with melted butter. Then press into a pie plate or tin...       

***FILLING***                                                     ***Topping***          

1/4 cup pecans, crushed                                           1 cup sour cream 

3 - 8oz. packages cream cheese              1 tablespoon vanilla extract

1/2 cup sugar                                                       3 tablespoons sugar

1 teaspoon vanilla extract

2 eggs

1 tablespoon orange rind, grated

Instructions:                 

Sprinkle crushed pecans along the bottom of the graham cracker crust. Combine filling ingredients together in a large bowl and mix until smooth. Pour mixture into the pie crust and bake for 35-45 minutes at 350 degrees. Allow to cool. Combine topping ingredients together and mix well. Pour over the cheesecake and bake for 5 minutes longer, at 350 degrees. Chill before serving...

~Fettuccini Alfredo~

1 (8-oz.) pkg. cream cheese, cubed

3/4 cup (3ozs.) grated parmesan cheese

1/2 cup butter

1/2 cup milk

8 ozs. fettuccini, cooked, drained

Parsley for garnish

Can add some broccoli florets on top

In a large saucepan, stir together 8 oz. cream cheese, 3/4 cup parmesan cheese, 1/2 cup butter and 1/2 cup milk over low heat until smooth.

Add cooked fettuccini; toss lightly, sprinkle with some parsley, broccoli florets and serve immediately. Great with garlic bread...

Italian Red Sauce

Ingredients:
- 1 Large (28 oz.) can of crushed tomatoes
- 1 (14 1/2oz) can of Delmonte Italian Style Stewed Tomatoes
-1/2 small can tomato sauce
- 8 oz. (1/2 lb.) of ground beef or chuck (and you can use Italian sausage broken up)
- onion chopped small and 2 to 3 cloves of garlic chopped
- 1 tablespoon of sugar
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- Oregano to taste
How to Prepare:
1. Brown the ground meat and sausage until broken up and no longer pink.
2. Brown onion and garlic. Add the cans of tomatoes that have been blended in a blender to almost smooth.
3. Add 1 Tablespoon of sugar.
4. Add salt and pepper.
5. Sprinkle on desired amount of oregano.
6. Some people like basil leaves (add if desired).
7. Some people like garlic powder instead of fresh garlic. (add if desired).
8. Simmer until thickened.
9. Serve over cooked pasta with parmesan cheese.
